  • 02400 g pork mince
  • 03150 g ricotta

Lightly crush your 1 tsp fennel seeds in a pestle and mortar, if you have one. Leave them whole if not. Now, combine the 400 g pork mince, 150 g ricotta, 1 egg, 50 g breadcrumbs and fennel in a large bowl. Mix well, then finely grate in the 30 g Pecorino Romano and season generously with some salt and some black pepper. Vigorously mix for a couple of minutes, until the mixture feels cohesive and a bit sticky.
