  • 0250 g demerara sugar
  • 03200 g tomato ketchup

Thinly slice the 1/2 head white cabbage using a mandoline. Put it in a bowl of iced water for 2 minutes, then drain and leave to dry on a clean towel while you prepare the sauce. The iced water enhances the cabbage's crunch and gives it extra volume.
